Description

A healthy and flavorful chicken dish stuffed with fresh mozzarella, tomatoes, and basil, cooked to perfection in an air fryer.


Ingredients

  • 2 boneless, skinless chicken fillets
  • 1/2 cup fresh mozzarella, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh basil leaves
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the air fryer to 375°F (190°C).
  2. Slice a pocket into each chicken fillet, being careful not to cut all the way through.
  3. Stuff each chicken fillet with mozzarella, tomatoes, and basil.
  4. Season the outside with olive oil, garlic powder, Italian seasoning, salt, and pepper.
  5. Place the chicken in the air fryer basket and cook for 12-15 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
  6. Let rest for 5 minutes before serving.

Notes

  • Use toothpicks to secure the stuffed chicken if needed.
  • Check doneness with a meat thermometer for best results.
  • Serve with a side of balsamic glaze for extra flavor.
