Ingredients

- 2 boneless, skinless chicken fillets
- 1/2 cup fresh mozzarella, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh basil leaves
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the air fryer to 375°F (190°C).
- Slice a pocket into each chicken fillet, being careful not to cut all the way through.
- Stuff each chicken fillet with mozzarella, tomatoes, and basil.
- Season the outside with olive oil, garlic powder, Italian seasoning, salt, and pepper.
- Place the chicken in the air fryer basket and cook for 12-15 minutes, flipping halfway, until internal temperature reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
- Use toothpicks to secure the stuffed chicken if needed.
- Check doneness with a meat thermometer for best results.
- Serve with a side of balsamic glaze for extra flavor.
