Ingredients
- Large shrimp: 1 lb, peeled and deveined
- Shredded coconut: 1 cup, unsweetened
- Panko breadcrumbs: 1 cup
- All-purpose flour: 1/2 cup
- Eggs: 2, beaten
- Salt: 1/2 teaspoon
- Pepper: 1/2 teaspoon
- Garlic powder: 1 teaspoon
- Lime juice: 1 tablespoon
Instructions
- Prepare the shrimp by rinsing under cold water and patting dry with paper towels.
- Create the breading station with three shallow bowls: one for flour, one for beaten eggs, and one for the coconut-panko mixture.
- Coat each shrimp in flour, then dip in eggs, and finally coat with the coconut-panko mixture.
- Preheat the air fryer to 400°F (200°C) for about 5 minutes.
- Lightly spray the air fryer basket with cooking spray, arrange the shrimp in a single layer, and cook for 8-10 minutes, flipping halfway through.
