  • 🍅 Diced Tomatoes: 1 can (14.5 oz or 400 g, drained)
  • 🧅 Onion: 1 medium, diced
  • 🧄 Garlic: 2 cloves, minced
  • 🧀 Shredded Cheese: 1 cup (cheddar or mozzarella)
  • 🧂 Salt: 1 teaspoon
  • 🧄 Pepper: 1/2 teaspoon
  • 🌶️ Italian Seasoning: 1 teaspoon (optional)
  • 🛢️ Olive Oil: 1 tablespoon (for cooking)

Instructions

  1. Wash the bell peppers and cut the tops off, removing seeds and membranes.
  2. In a skillet, heat olive oil and sauté diced onion and minced garlic until translucent.
  3. Add ground beef to the skillet, season, and cook until browned. Drain excess fat.
  4. Transfer the beef mixture to a bowl and mix in cooked rice and diced tomatoes.
  5. Stuff each pepper with the beef and rice mixture, leaving space for cheese.
  6. Preheat the air fryer to 350°F (175°C) and place the stuffed peppers upright in the basket.
  7. Cook for 12-15 minutes, then add cheese on top and cook for an additional 3-5 minutes until melted.
  8. Let cool for a few minutes before serving.
