Ingredients
- 🫑 Bell Peppers: 4 large (any color)
- 🐄 Ground Beef: 1 lb (450 g)
- 🍚 Cooked Rice: 1 cup (cooked, white or brown)
- 🍅 Diced Tomatoes: 1 can (14.5 oz or 400 g, drained)
- 🧅 Onion: 1 medium, diced
- 🧄 Garlic: 2 cloves, minced
- 🧀 Shredded Cheese: 1 cup (cheddar or mozzarella)
- 🧂 Salt: 1 teaspoon
- 🧄 Pepper: 1/2 teaspoon
- 🌶️ Italian Seasoning: 1 teaspoon (optional)
- 🛢️ Olive Oil: 1 tablespoon (for cooking)
Instructions
- Wash the bell peppers and cut the tops off, removing seeds and membranes.
- In a skillet, heat olive oil and sauté diced onion and minced garlic until translucent.
- Add ground beef to the skillet, season, and cook until browned. Drain excess fat.
- Transfer the beef mixture to a bowl and mix in cooked rice and diced tomatoes.
- Stuff each pepper with the beef and rice mixture, leaving space for cheese.
- Preheat the air fryer to 350°F (175°C) and place the stuffed peppers upright in the basket.
- Cook for 12-15 minutes, then add cheese on top and cook for an additional 3-5 minutes until melted.
- Let cool for a few minutes before serving.
