Description

Almond Joy Truffles are a delightful combination of rich chocolate, crunchy almonds, and sweet coconut, reminiscent of the classic candy bar but with a homemade twist.

Ingredients

  • 🌰 Whole almonds – 24 pieces
  • 🥥 Shredded coconut – 2 cups (sweetened)
  • 🥛 Sweetened condensed milk – 1 cup
  • 🍫 Dark chocolate – 8 oz (chopped or chocolate chips)
  • 🍦 Vanilla extract – 1 teaspoon

Instructions

  1. In a large mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract until evenly mixed.
  2. Take about a tablespoon of the coconut mixture and roll it into a ball, then press a whole almond into the center.
  3. Chill the formed truffles in the refrigerator for about 30 minutes to firm up.
  4. Melt the dark chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
  5. Dip each truffle into the melted chocolate, ensuring it is completely coated, and place it back on a parchment-lined baking sheet.
  6. While the chocolate is still wet, sprinkle extra shredded coconut on top and place a whole almond for decoration.
  7. Return the coated truffles to the refrigerator for 15-20 minutes to allow the chocolate to set completely.
