  • Apples: 1 ½ cups, peeled and diced (about 2 medium apples)
  • Greek yogurt: 1 cup (240g)
  • Brown sugar: ¾ cup (150g), packed
  • Ground cinnamon: 1 teaspoon
  • Baking powder: 2 teaspoons
  • Eggs: 2 large
  • Vanilla extract: 1 teaspoon
  • Salt: ½ teaspoon

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
  3. In another bowl, combine the Greek yogurt, brown sugar, eggs, and vanilla extract, whisking until smooth.
  4. Pour the wet mixture into the dry ingredients and gently fold them together, then fold in the diced apples.
  5. Scoop the batter into a muffin tin, filling each cup about ¾ full.
  6. Bake in the preheated oven for 18-22 minutes, or until a toothpick comes out clean.
  7. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
