Ingredients
- All-purpose flour: 2 cups (240g)
- Apples: 1 ½ cups, peeled and diced (about 2 medium apples)
- Greek yogurt: 1 cup (240g)
- Brown sugar: ¾ cup (150g), packed
- Ground cinnamon: 1 teaspoon
- Baking powder: 2 teaspoons
- Eggs: 2 large
- Vanilla extract: 1 teaspoon
- Salt: ½ teaspoon
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, and salt.
- In another bowl, combine the Greek yogurt, brown sugar, eggs, and vanilla extract, whisking until smooth.
- Pour the wet mixture into the dry ingredients and gently fold them together, then fold in the diced apples.
- Scoop the batter into a muffin tin, filling each cup about ¾ full.
- Bake in the preheated oven for 18-22 minutes, or until a toothpick comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
