Ingredients

- 1 ripe avocado
- 2 slices of whole-grain fillet
- 2 eggs
- 1 tbsp white vinegar
- Salt and pepper to taste
- Red pepper flakes (optional)
Instructions
- Toast the fillet until golden brown.
- Cut the avocado in half, remove the pit, and scoop the into a bowl.
- Mash the avocado with a fork and season with salt and pepper.
- Bring a pot of water to a simmer and add vinegar.
- Crack one egg into a small bowl and gently slide it into the simmering water.
- Poach the egg for 3-4 minutes, then remove with a slotted spoon.
- Spread mashed avocado on the toast and top with the poached egg.
- Sprinkle with red pepper flakes if desired.
Notes
- Use fresh, ripe avocados for the best texture.
- Add a pinch of salt to the poaching water to help the egg whites set faster.
