Ingredients

- 2 cups cooked chicken, shredded
- 1 lb gnocchi
- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup chopped carrots
- 1 cup chopped celery
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and garlic. Cook until softened.
- Add chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil.
- Stir in gnocchi and shredded chicken. Reduce heat and simmer for 5 minutes.
- Pour in heavy cream and mix well.
- Transfer the soup to an oven-safe dish. Bake for 15 minutes until bubbly.
- Let cool slightly before serving.

- Use store-bought or homemade gnocchi.
- Adjust seasoning to your taste.
- Garnish with fresh parsley if desired.
