Ingredients

  • 2 cups cooked chicken, shredded
  • 1 lb gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a large pot over medium heat. Add onions, carrots, celery, and garlic. Cook until softened.
  3. Add chicken broth, thyme, rosemary, salt, and pepper. Bring to a boil.
  4. Stir in gnocchi and shredded chicken. Reduce heat and simmer for 5 minutes.
  5. Pour in heavy cream and mix well.
  6. Transfer the soup to an oven-safe dish. Bake for 15 minutes until bubbly.
  7. Let cool slightly before serving.
