Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pat the chicken breasts dry and season with salt, pepper, and Italian seasoning.
  3. Marinate the chicken in olive oil, minced garlic, and Italian seasoning for a few hours if possible.
  4. In an oven-safe skillet, sauté minced garlic in olive oil until fragrant.
  5. Sear the seasoned chicken breasts for 4-5 minutes on each side until golden brown.
  6. Add diced tomatoes to the skillet and cook for a few minutes.
  7. Nestle the chicken back into the skillet, top with mozzarella, and transfer to the oven.
  8. Bake for 20-25 minutes, checking for an internal temperature of 165°F (75°C).
