Instructions
- Preheat the oven to 400°F (200°C).
- Pat the chicken breasts dry and season with salt, pepper, and Italian seasoning.
- Marinate the chicken in olive oil, minced garlic, and Italian seasoning for a few hours if possible.
- In an oven-safe skillet, sauté minced garlic in olive oil until fragrant.
- Sear the seasoned chicken breasts for 4-5 minutes on each side until golden brown.
- Add diced tomatoes to the skillet and cook for a few minutes.
- Nestle the chicken back into the skillet, top with mozzarella, and transfer to the oven.
- Bake for 20-25 minutes, checking for an internal temperature of 165°F (75°C).
