Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and scrub the russet potatoes thoroughly, then pat them dry and prick each potato several times with a fork.
  3. Bring a large pot of water to a boil and blanch the broccoli florets for 2-3 minutes, then drain.
  4. In a mixing bowl, combine the blanched broccoli with olive oil, garlic powder, salt, and pepper.
  5. Rub the potatoes with olive oil and sprinkle with salt and pepper, then place them on a baking sheet or directly on the oven rack.
