Ingredients
- Russet potatoes – 4 large
- Fresh broccoli – 2 cups, cut into florets
- Olive oil – 2 tablespoons
- Garlic powder – 1 teaspoon
- Salt – to taste
- Pepper – to taste
- Shredded cheese – 1 cup (cheddar or your choice)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and scrub the russet potatoes thoroughly, then pat them dry and prick each potato several times with a fork.
- Bring a large pot of water to a boil and blanch the broccoli florets for 2-3 minutes, then drain.
- In a mixing bowl, combine the blanched broccoli with olive oil, garlic powder, salt, and pepper.
- Rub the potatoes with olive oil and sprinkle with salt and pepper, then place them on a baking sheet or directly on the oven rack.
- Bake the potatoes for 45-60 minutes until the skin is crispy and the insides are fluffy.
- Remove the potatoes from the oven, cut a slit down the center, fluff the insides, and top with the seasoned broccoli and shredded cheese.
- Return the topped potatoes to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
- Let cool slightly before serving.
