- 4 boneless, skinless chicken fillets
- 2 cups baby potatoes, halved
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 cup BBQ sauce
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss potatoes, bell peppers, and onion with olive oil, salt, pepper, garlic powder, and paprika.
- Spread vegetables on a sheet pan in a single layer.
- Place chicken fillets on top of vegetables.
- Brush chicken with half the BBQ sauce.
- Bake for 20 minutes.
- Remove from oven, flip chicken, and brush with remaining BBQ sauce.
- Bake for another 15-20 minutes or until chicken reaches 165°F (74°C).
- Let rest for 5 minutes before serving.
Notes
- Cut potatoes into even sizes for even cooking.
- Use your favorite BBQ sauce for best results.
- For extra crispiness, broil for 2-3 minutes at the end.
