Ingredients

  • 4 boneless, skinless chicken fillets
  • 2 cups baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 cup BBQ sauce

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss potatoes, bell peppers, and onion with olive oil, salt, pepper, garlic powder, and paprika.
  3. Spread vegetables on a sheet pan in a single layer.
  4. Place chicken fillets on top of vegetables.
  5. Brush chicken with half the BBQ sauce.
  6. Bake for 20 minutes.
  7. Remove from oven, flip chicken, and brush with remaining BBQ sauce.
  8. Bake for another 15-20 minutes or until chicken reaches 165°F (74°C).
  9. Let rest for 5 minutes before serving.

  • Cut potatoes into even sizes for even cooking.
  • Use your favorite BBQ sauce for best results.
  • For extra crispiness, broil for 2-3 minutes at the end.
