A hearty and nutritious beef and barley soup that’s perfect for cold days. This soup combines tender beef, chewy barley, and fresh vegetables in a rich broth.


Ingredients

  • 1 lb beef stew meat, cubed
  • 1 cup pearl barley, rinsed
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups beef broth
  • 4 cups water
  • 2 cloves garlic, minced
  • 1 bay leaf
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add beef cubes and brown on all sides.
  3. Remove beef and set aside.
  4. In the same pot, sauté onions, carrots, and celery until softened.
  5. Add garlic and cook for 1 minute.
  6. Return beef to the pot.
  7. Add beef broth, water, barley, bay leaf, salt, and pepper.
  8. Bring to a boil, then reduce heat and simmer for 1 hour or until beef is tender and barley is cooked.
  9. Remove bay leaf before serving.

Notes

  • For extra flavor, sear the beef in batches.
  • Barley will thicken the soup as it sits—add more broth if needed.
  • This soup freezes well.
