A hearty and nutritious beef and barley soup that’s perfect for cold days. This soup combines tender beef, chewy barley, and fresh vegetables in a rich broth.

- 1 lb beef stew meat, cubed
- 1 cup pearl barley, rinsed
- 1 large onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups beef broth
- 4 cups water
- 2 cloves garlic, minced
- 1 bay leaf
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Remove beef and set aside.
- In the same pot, sauté onions, carrots, and celery until softened.
- Add garlic and cook for 1 minute.
- Return beef to the pot.
- Add beef broth, water, barley, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour or until beef is tender and barley is cooked.
- Remove bay leaf before serving.
Notes
- For extra flavor, sear the beef in batches.
- Barley will thicken the soup as it sits—add more broth if needed.
- This soup freezes well.
