Ingredients

  • 500g beef stew meat, cubed
  • 2 carrots, chopped
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp tomato paste
  • 4 cups beef broth
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Heat olive oil in a pot over medium heat. Brown the beef on all sides, then remove and set aside.
  2. Add onions and garlic to the pot. Cook until soft.
  3. Stir in tomato paste, salt, pepper, and thyme.
  4. Return beef to the pot. Add carrots, potatoes, beef broth, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beef is tender.
  6. Remove bay leaf before serving.
