- 1 cup red wine
- 2 tbsp butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and diced
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions
- Season the beef tenderloin with salt and pepper.
- Heat olive oil in a pan and sear the beef on all sides until browned.
- Remove the beef and set aside. In the same pan, add red wine and reduce by half.
- Stir in butter to create a smooth sauce.
- Boil potatoes until tender, then mash with garlic, heavy cream, salt, and pepper.
- Slice the beef and serve with red wine reduction and mashed potatoes.
