Instructions
- Rinse the black eyed peas and soak them overnight.
- In a pot, heat olive oil over medium heat.

- Add soaked black eyed peas, water, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1.5 to 2 hours.
- Remove bay leaf before serving.
