Description

Rich and indulgent brandy cherry truffles with a smooth chocolate coating.


Ingredients

Scale
  • 200g dark chocolate (70% cocoa)
  • 100ml heavy cream
  • 2 tbsp brandy
  • 50g glazed cherries, finely chopped
  • 2 tbsp unsweetened cocoa powder
  • 50g powdered sugar

Instructions

  1. Chop the dark chocolate into small pieces and place in a heatproof bowl.
  2. Heat the heavy cream until simmering, then pour over the chocolate.
  3. Let it sit for 2 minutes, then stir until smooth.
  4. Add the brandy and chopped cherries, mix well.
  5. Refrigerate for 2 hours until firm.
  6. Use a spoon to scoop small portions, then roll into balls.
  7. Coat each truffle in cocoa powder or powdered sugar.
  8. Refrigerate for another 30 minutes before serving.
