Description
Rich and indulgent brandy cherry truffles with a smooth chocolate coating.
Ingredients
Scale
- 200g dark chocolate (70% cocoa)
- 100ml heavy cream
- 2 tbsp brandy
- 50g glazed cherries, finely chopped
- 2 tbsp unsweetened cocoa powder
- 50g powdered sugar
Instructions
- Chop the dark chocolate into small pieces and place in a heatproof bowl.
- Heat the heavy cream until simmering, then pour over the chocolate.
- Let it sit for 2 minutes, then stir until smooth.
- Add the brandy and chopped cherries, mix well.
- Refrigerate for 2 hours until firm.
- Use a spoon to scoop small portions, then roll into balls.
- Coat each truffle in cocoa powder or powdered sugar.
- Refrigerate for another 30 minutes before serving.

- Use high-quality chocolate for best results.
- Adjust brandy quantity to taste.
- Store in an airtight container in the fridge for up to a week.
