Description

A quick and easy breakfast dish made with fried rice, eggs, and vegetables.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 2 eggs, beaten
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup frozen peas and carrots
  • 2 tbsp vegetable oil
  • 1 tbsp soy sauce
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 green onion, chopped (for garnish)

Instructions

  1. Heat oil in a large pan over medium-high heat.
  2. Add onion and bell pepper, sauté for 2 minutes.
  3. Push vegetables to one side, pour beaten eggs into the pan and scramble until cooked.
  4. Add frozen peas and carrots, stir for 1 minute.
  5. Add cooked rice, breaking up any clumps.
  6. Pour soy sauce over the rice, mix well.
  7. Season with salt and pepper, stir-fry for 3-4 minutes.
  8. Garnish with chopped green onion before serving.

Notes

  • Use day-old rice for best texture.
  • You can add cooked meat like ham or bacon.
