A quick and easy breakfast dish made with fried rice, eggs, and vegetables.
Ingredients

- 2 cups cooked rice (preferably day-old)
- 2 eggs, beaten
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup frozen peas and carrots
- 2 tbsp vegetable oil
- 1 tbsp soy sauce
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 green onion, chopped (for garnish)
Instructions
- Heat oil in a large pan over medium-high heat.
- Add onion and bell pepper, sauté for 2 minutes.
- Push vegetables to one side, pour beaten eggs into the pan and scramble until cooked.
- Add frozen peas and carrots, stir for 1 minute.
- Add cooked rice, breaking up any clumps.
- Pour soy sauce over the rice, mix well.
- Season with salt and pepper, stir-fry for 3-4 minutes.
- Garnish with chopped green onion before serving.
Notes
- Use day-old rice for best texture.
- You can add cooked meat like ham or bacon.
- Adjust soy sauce to taste.
