Ingredients

- 2 large flour tortillas
- 2 eggs
- 1/4 cup shredded cheese (cheddar or Monterey Jack)
- 2 tbsp diced bell peppers
- 2 tbsp diced onions
- 1 tbsp butter or oil
- Salt and pepper to taste
Instructions
- Heat a skillet over medium heat and melt butter or oil.
- Add diced bell peppers and onions, sauté for 2 minutes.
- Whisk eggs in a bowl, season with salt and pepper, then pour into the skillet.
- Scramble the eggs until fully cooked, then remove from the skillet.
- Place one tortilla in the skillet, sprinkle half the cheese evenly.
- Spread the scrambled eggs and veggies over the cheese.
- Top with remaining cheese and the second tortilla.
- Cook for 2-3 minutes per side until golden and crispy.
- Slice into wedges and serve hot.
Notes
- Use whole wheat tortillas for extra fiber.
- Add cooked bacon or sausage for more protein.
- Serve with salsa or sour cream for extra flavor.
