  • 3 tablespoons unsalted butter (melted and cooled)
  • 2 1/2 tablespoons milk

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. Cream together the unsalted butter, granulated sugar, and light brown sugar in a large mixing bowl using an electric mixer until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In a separate bowl, whisk together the cake flour, cornstarch, baking soda, baking powder, and kosher salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Prepare the filling by mixing the softened butter, light brown sugar, cinnamon, and cake flour until smooth.
  7. Scoop about 2 tablespoons of cookie dough, flatten it, and place a teaspoon of filling in the center. Fold the dough over and seal the edges.
