Ingredients
Scale
- 1 cup unsalted butter (room temperature)
- 1/2 cup granulated sugar
- 1 cup light brown sugar (packed)
- 2 eggs (room temperature)
- 1 teaspoon vanilla extract
- 3 3/4 cups cake flour
- 2 tablespoons cornstarch
- 1 teaspoon baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon kosher salt
For the filling:
- 5 tablespoons unsalted butter (softened)
- 3/4 cup light brown sugar (packed)
- 1 teaspoon cinnamon
- 2 tablespoons cake flour (for filling)
For the glaze:
- 1 cup powdered sugar
- 1/2 teaspoon cinnamon (for glaze)
- 3 tablespoons unsalted butter (melted and cooled)
- 2 1/2 tablespoons milk
Instructions
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Cream together the unsalted butter, granulated sugar, and light brown sugar in a large mixing bowl using an electric mixer until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- In a separate bowl, whisk together the cake flour, cornstarch, baking soda, baking powder, and kosher salt.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Prepare the filling by mixing the softened butter, light brown sugar, cinnamon, and cake flour until smooth.
- Scoop about 2 tablespoons of cookie dough, flatten it, and place a teaspoon of filling in the center. Fold the dough over and seal the edges.
- Place the shaped cookies on the baking sheets, spacing them about 2 inches apart, and bake for 12-15 minutes until lightly golden.
- While the cookies bake, prepare the glaze by whisking together the powdered sugar, cinnamon, melted butter, and milk until smooth.
- Let the cookies cool for 5 minutes on the baking sheets, then transfer to a wire rack and drizzle with glaze.
- Allow the glaze to set before serving. Enjoy warm or store in an airtight container.
Notes
- Use room temperature ingredients for better mixing.
- Don’t overmix the dough to avoid tough cookies.
- Chill the dough if it feels too soft.
- Check for doneness by looking for lightly golden edges.
- Experiment with different fillings for variety.
