Ingredients
- Cream Cheese: 8 oz of softened cream cheese
- Ricotta Cheese: 15 oz of drained ricotta cheese
- Granulated Sugar: 3/4 cup of sugar
- Vanilla Extract: 1 teaspoon of vanilla extract
- Graham Cracker Crumbs: 1 1/2 cups of crumbs
- Unsalted Butter: 1/2 cup of melted butter
- Mini Chocolate Chips: 1/2 cup of chocolate chips
- Pistachios: 1/2 cup of chopped pistachios
Instructions
- Preheat your oven to 325°F (160°C) and line an 8×8 inch baking pan with parchment paper.
- In a medium bowl, combine graham cracker crumbs with melted butter and press into the bottom of the prepared pan. Bake for 10 minutes and let cool.
- In a large mixing bowl, beat softened cream cheese and ricotta cheese until smooth. Add sugar and vanilla, mixing until well combined.
- Pour the cheesecake filling over the cooled crust and spread evenly.
- Sprinkle mini chocolate chips and chopped pistachios over the top.
- Bake for 30-35 minutes until the edges are set and the center is slightly jiggly. Let cool to room temperature.
- Chill in the refrigerator for at least 4 hours or overnight.
- Lift the cheesecake out of the pan using the parchment paper, cut into squares, and serve chilled.

- Optional: Add 1/2 teaspoon of cinnamon for a warm flavor.
