- 1 tsp cinnamon

- 1/4 cup almond milk (or any plant-based milk)
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a bowl, mix mashed sweet potato, coconut oil, maple syrup, and vanilla extract.
- In another bowl, whisk gluten-free flour, baking powder, baking soda, spices, and salt.
- Combine wet and dry ingredients, then add almond milk. Stir until just mixed.
- Divide batter evenly into 12 muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool before serving.
