  • 1 (3 1/2-pound) whole chicken

  • 1 1/2 tablespoons rock or granulated sugar
  • 1 1/3 cups uncooked jasmine rice
  • 2-inch knob fresh ginger, sliced
  • 1 1/2 tablespoons good-quality fish sauce
  • 2 teaspoons freshly ground black pepper
  • 3 1/2 ounces green cabbage, shredded
  • 1/2 ounce carrot, julienned
  • 1 small red onion, thinly sliced

Instructions

  1. Prepare the chicken by boiling it with onion and salt in a large pot.
  2. Cook the jasmine rice after rinsing it until the water runs clear.
  3. Shred the chicken once it has cooled.
  4. Prepare the dipping sauce by mixing apple cider vinegar, sugar, and fish sauce.
  5. Sauté shallots until golden brown and crispy.
  6. Assemble the dish by mixing the porridge with fish sauce and topping it with chicken and vegetables.
  7. Serve with dipping sauce and optional spicy chilis.
