Ingredients
- All-purpose flour – 2 cups (240 g)
- Baking powder – 2 teaspoons
- Salt – 1/2 teaspoon
- Feta cheese – 1 cup, crumbled (about 150 g)
- Sun-dried tomatoes – 1/2 cup, chopped (about 100 g)
- Olives – 1/2 cup, pitted and sliced (about 75 g)
- Spinach – 1 cup, fresh and chopped (about 30 g)
- Eggs – 2 large
- Milk – 3/4 cup (180 ml)
- Olive oil – 1/4 cup (60 ml)
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the muffin tin by lining it with paper liners or greasing it.
- In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
- In a separate bowl, beat the eggs and then add the milk and olive oil, mixing until well blended.
- Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the feta cheese, sun-dried tomatoes, olives, and spinach.
- Spoon the mixture into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
- Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
