  • Sun-dried tomatoes – 1/2 cup, chopped (about 100 g)
  • Olives – 1/2 cup, pitted and sliced (about 75 g)
  • Spinach – 1 cup, fresh and chopped (about 30 g)
  • Eggs – 2 large
  • Milk – 3/4 cup (180 ml)
  • Olive oil – 1/4 cup (60 ml)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the muffin tin by lining it with paper liners or greasing it.
  3. In a large mixing bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. In a separate bowl, beat the eggs and then add the milk and olive oil, mixing until well blended.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined. Fold in the feta cheese, sun-dried tomatoes, olives, and spinach.
  6. Spoon the mixture into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake in the preheated oven for 18-20 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. Let the muffins cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
