Instructions
- In a large bowl, combine shredded carrots and raisins.
- In a small bowl, whisk together mayonnaise, honey, lemon juice, and salt.
- Pour the dressing over the carrot mixture and toss to coat evenly.
- Cover and refrigerate for at least 1 hour before serving.
Notes
- For a lighter version, substitute Greek yogurt for mayonnaise.
- Add chopped walnuts or pecans for extra crunch.
