- 1 lb boneless, skinless chicken fillets, diced
- 1 cup orzo pasta
- 2 tbsp olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 cups chicken broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add diced chicken and cook until browned, about 5-7 minutes. Remove and set aside.
- In the same skillet, sauté onion and garlic until soft, about 3 minutes.
- Stir in orzo and cook for 1 minute.
- Pour in chicken broth, oregano, thyme, salt, and pepper. Bring to a simmer.
- Return chicken to the skillet, cover, and cook for 10-12 minutes until orzo is tender.
- Sprinkle with Parmesan cheese and fresh parsley before serving.
