Description
A cozy and comforting dish made with tender chicken thighs and hearty red potatoes, cooked to perfection in a slow cooker.
Ingredients
- 🍗 Chicken thighs – 1.5 lbs (about 6-8 pieces)
- 🥔 Red potatoes – 1.5 lbs (cut into quarters)
- 🧄 Garlic – 4 cloves (minced)
- 🧅 Onion – 1 medium (chopped)
- 🥣 Chicken broth – 1 cup
- 🌿 Fresh rosemary – 2 tablespoons (chopped, or 1 tablespoon dried)
- 🛢️ Olive oil – 2 tablespoons
- 🧂 Salt – 1 teaspoon (or to taste)
- 🧂 Pepper – 1/2 teaspoon (or to taste)
Instructions
- Pat the chicken thighs dry and season with salt and pepper.
- If desired, sear the chicken in a large skillet until golden brown.
- Wash and quarter the red potatoes.
- In the crockpot, layer chopped onion and minced garlic at the bottom.
- Add the quartered red potatoes on top of the onions.
- Place the seasoned chicken thighs on top of the potatoes.
- Pour chicken broth over the ingredients and sprinkle with rosemary.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
Notes
- For a lighter option, chicken breasts can be used but add extra broth to keep them moist.
- Frozen chicken can be used; cook on high for 4-5 hours.
- Yukon Gold or baby potatoes can be substituted for red potatoes.
