- 1 lb chicken thighs, diced
- 1 lb smoked sausage, sliced
- 1/2 cup vegetable oil
- 1/2 cup flour
- 1 large onion, chopped
- 1 green bell pepper, chopped
- 2 celery stalks, chopped
- 4 garlic cloves, minced
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 tsp thyme
- 1 tsp paprika
- 1/2 tsp cayenne pepper
- Salt and pepper to taste
- Cooked rice for serving
Instructions
- Heat oil in a large pot over medium heat. Add flour and stir constantly to make a dark brown roux.
- Add onion, bell pepper, celery, and garlic. Cook until softened.
- Stir in chicken broth, tomatoes, thyme, paprika, and cayenne pepper. Bring to a simmer.
- Add chicken and sausage. Cook for 30-40 minutes until chicken is tender.
- Season with salt and pepper. Serve hot over cooked rice.
Notes
- Stir the roux constantly to prevent burning.
- Adjust cayenne pepper for desired spiciness.
- Let gumbo rest for 10 minutes before serving for best flavor.
