Ingredients
- 🍗 Chicken breast – 4 pieces (about 1.5 lbs or 680 g)
- 🍠 Sweet potatoes – 2 large (about 1.5 lbs or 680 g)
- 🛢️ Olive oil – 3 tablespoons
- 🧄 Garlic – 4 cloves, minced
- 🌶️ Paprika – 1 teaspoon
- 🥦 Broccoli – 2 cups, chopped into florets
- 🧂 Salt – to taste
- 🧂 Pepper – to taste
Instructions
- Prepare the chicken by rinsing, drying, and seasoning with olive oil, salt, pepper, and garlic powder. Let it marinate.
- Peel and chop the sweet potatoes into 1-inch cubes, then toss with olive oil, garlic, paprika, salt, and pepper.
- Cook the marinated chicken on a grill pan over medium-high heat for 6-7 minutes on each side until cooked through.
- Spread the seasoned sweet potatoes on a baking sheet and roast in a preheated oven at 400°F (200°C) for 25-30 minutes.
- Slice the grilled chicken and layer it with roasted sweet potatoes and steamed broccoli in meal prep containers.
- Store the containers in the refrigerator for up to four days.
