A hearty and flavorful soup combining tender chicken and wild rice in a savory broth.
Ingredients

- 1 lb boneless, skinless chicken breasts
- 1 cup wild rice, uncooked
- 4 cups chicken broth
- 1 cup diced carrots
- 1 cup diced celery
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic, thyme, and rosemary. Cook for 1 minute.
- Pour in chicken broth and add wild rice and bay leaf. Bring to a boil.
- Reduce heat, cover, and simmer for 30 minutes.
- Add chicken breasts and cook for 20 minutes or until chicken is done.
- Remove chicken, shred it, and return to the pot.
- Season with salt and pepper. Serve hot.
Notes
- Wild rice takes longer to cook than white rice.
- You can use leftover cooked chicken to save time.
- Store leftovers in the fridge for up to 3 days.
