Ingredients
- 🍗 Chicken breast: 2 boneless, skinless (about 500g)
- 🍝 Pasta: 300g (your choice, such as penne or fettuccine)
- 🥦 Broccoli: 1 large head, cut into florets
- 🧄 Garlic: 4 cloves, minced
- 🛢️ Olive oil: 3 tablespoons
- 🧀 Parmesan cheese: 1 cup, grated
- 🧂 Salt: to taste
- 🧂 Pepper: to taste
Instructions
- Season the chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken for 6-7 minutes on each side until golden brown. Remove and let rest.
- In a large pot, bring salted water to a boil and cook the broccoli florets for a few minutes until tender yet crisp. Drain and reserve some pasta water.
- In the same pot, cook the pasta according to package instructions until al dente. Add the broccoli during the last 3 minutes of cooking.
- In the skillet, add remaining olive oil and sauté minced garlic for about a minute. Add drained pasta and broccoli, mixing gently.
- Stir in grated parmesan cheese, adjusting seasoning with salt and pepper. Add reserved pasta water if needed for consistency.
