Description

Chicken cordon bleu is a classic dish featuring chicken fillets stuffed with ham and cheese, then breaded and baked or fried to crispy perfection.


Ingredients

  • 4 boneless, skinless chicken fillets
  • 4 slices Swiss cheese
  • 4 slices ham
  • 1 cup breadcrumbs
  • 1/2 cup flour
  • 2 eggs, beaten
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp butter
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Pound chicken fillets to 1/4-inch thickness.
  3. Place 1 slice ham and 1 slice cheese on each chicken fillet.
  4. Roll up chicken tightly and secure with toothpicks.
  5. Coat each roll in flour, then egg, then breadcrumbs.
  6. Heat butter and olive oil in skillet over medium heat.
  7. Brown chicken rolls on all sides, about 2 minutes per side.
  8. Transfer to baking dish and bake for 20 minutes.
  9. Remove toothpicks before serving.

Notes

  • Chicken can be prepared ahead and refrigerated before cooking.
  • For crispier coating, broil for last 2 minutes of baking.
  • Substitute mozzarella or cheddar for Swiss cheese if preferred.
