Description

A refreshing and easy-to-make pita salad with chicken and cucumber.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 large cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 2 whole wheat pitas, toasted and cut into pieces
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine chicken, cucumber, red onion, cherry tomatoes, and pita pieces.
  2. In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss gently.
  4. Sprinkle crumbled feta cheese on top.
  5. Serve immediately or refrigerate for up to 2 hours.

Notes

  • Use rotisserie chicken for quick prep.
  • Add fresh parsley or mint for extra flavor.
