Description
A refreshing and easy-to-make pita salad with chicken and cucumber.
Ingredients

- 2 cups cooked chicken, shredded
- 1 large cucumber, diced
- 1/2 red onion, thinly sliced
- 1 cup cherry tomatoes, halved
- 2 whole wheat pitas, toasted and cut into pieces
- 1/4 cup feta cheese, crumbled
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine chicken, cucumber, red onion, cherry tomatoes, and pita pieces.
- In a small bowl, whisk olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently.
- Sprinkle crumbled feta cheese on top.
- Serve immediately or refrigerate for up to 2 hours.
Notes
- Use rotisserie chicken for quick prep.
- Add fresh parsley or mint for extra flavor.
- Replace feta with goat cheese if preferred.
