- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 cup cooked rice
- 1/2 cup black beans, drained
- 1/4 cup shredded cheese
- 2 tbsp sour cream
- 1 tbsp chopped cilantro
- 1 lime, cut into wedges
Instructions
- Heat>Heat olive oil in a skillet over medium-high heat.
- Add chicken and cook until browned, about 5 minutes.
- Add bell peppers and onion to the skillet.
- Sprinkle fajita seasoning over the mixture and stir well.
- Cook for 5-7 minutes until vegetables soften.
- Divide cooked rice into bowls.
- Top with chicken and vegetable mixture.
- Add black beans, cheese, and sour cream.
- Garnish with cilantro and lime wedges.
