Description
A comforting chicken dish inspired by classic French onion soup, featuring tender chicken, caramelized onions, and melted Gruyère cheese.
Ingredients
- 🍗 Chicken breasts – 4 pieces (about 1.5 lbs or 680 g)
- 🧅 Onions – 3 large, thinly sliced
- 🥩 Beef broth – 2 cups (480 ml)
- 🧀 Gruyère cheese – 1 cup, shredded
- 🌿 Fresh thyme – 1 teaspoon, chopped (or 1/2 teaspoon dried thyme)
- 🧈 Butter – 2 tablespoons
- 🛢️ Olive oil – 2 tablespoons
- 🧂 Salt – to taste
- 🧂 Pepper – to taste
- 🥖 Baguette – 1, sliced into rounds
Instructions
- Season the chicken breasts with salt and pepper on both sides.
- Thinly slice the onions and set them aside.
- In a large skillet, heat 1 tablespoon of olive oil over medium heat and add the sliced onions. Cook for 15-20 minutes until caramelized.
- Remove the onions and set aside. In the same skillet, add the remaining tablespoon of olive oil and sear the chicken for 5-7 minutes on each side until golden brown.
- Remove the chicken and set aside. Pour in the beef broth and bring to a simmer, scraping the bottom of the pan.
- Return the chicken to the skillet, spoon caramelized onions over the top, and sprinkle with thyme. Simmer for another 5 minutes.
- Preheat the oven’s broiler. Slice the baguette and toast under the broiler for 2-3 minutes until golden brown.
- Sprinkle shredded Gruyère cheese over the chicken and onion mixture, then place under the broiler for 2-3 minutes until bubbly and golden.
