Description
Quick and easy chicken fried rice made on a Blackstone griddle.
Ingredients

- 2 cups cooked rice
- 1 lb chicken fillet, diced
- 2 eggs
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 tbsp soy sauce
- 1 tbsp vegetable oil
- 1 tsp garlic powder
- 1 tsp ginger powder
- Salt and pepper to taste
Instructions
- Heat the Blackstone griddle to medium-high and add oil.
- Cook diced chicken until no longer pink, then set aside.
- Scramble eggs on the griddle and remove.
- Add mixed vegetables and sauté for 2 minutes.
- Stir in cooked rice, chicken, and eggs.
- Season with soy sauce, garlic powder, ginger powder, salt, and pepper.
- Mix well and cook for 3-5 minutes until heated through.
Notes
- Use day-old rice for best texture.
- Adjust seasoning to taste.
- Add chopped green onions for extra flavor.
