Ingredients
- 🍗 Chicken breast: 500 grams (about 1 lb), boneless and skinless
- 🌾 Quinoa: 1 cup, rinsed
- 🥒 Cucumber: 1 medium, diced
- 🍅 Tomatoes: 2 medium, diced
- 🧅 Red onion: 1 small, thinly sliced
- 🧀 Feta cheese: 100 grams (about 3.5 oz), crumbled
- 🥣 Tzatziki sauce: 1 cup (store-bought or homemade)
- 🛢️ Olive oil: 2 tablespoons
- 🍋 Lemon juice: 2 tablespoons
- 🧄 Garlic: 2 cloves, minced
- 🌿 Dried oregano: 1 teaspoon
- 🧂 Salt and pepper: to taste
Instructions
- Cook the quinoa by bringing 2 cups of water to a boil, adding rinsed quinoa and a pinch of salt, then simmering for 15 minutes.
- Prepare the chicken by marinating it, then grilling or cooking in a skillet for 6-7 minutes on each side until golden brown and cooked through.
- Make the tzatziki sauce by mixing grated cucumber, Greek yogurt, minced garlic, lemon juice, and salt.
- Assemble the bowls by starting with quinoa, adding sliced chicken, diced cucumber, tomatoes, red onion, crumbled feta, and drizzling with tzatziki sauce.
