A healthier twist on the classic meatloaf using ground chicken, fresh herbs, and a sweet ketchup glaze.
Ingredients
- Ground chicken – 1 lb (450 g)
- Breadcrumbs – 1 cup (100 g)
- Onion – 1 medium, finely chopped
- Garlic – 2 cloves, minced
- Egg – 1 large
- Fresh parsley – 1/4 cup, chopped
- Ketchup – 1/2 cup (for topping and mixing)
- Salt – 1 teaspoon
- Pepper – 1/2 teaspoon
Instructions
- Preheat your oven to 350°F (175°C).
- In a small skillet, sauté the finely chopped onion in olive oil until translucent, then add minced garlic and cook for another minute.
- In a large mixing bowl, combine ground chicken, breadcrumbs, sautéed onion and garlic, egg, chopped parsley, salt, and pepper. Mix gently.
- Transfer the mixture to a loaf pan, shaping it into a loaf and smoothing the top.
- Spread ketchup evenly over the top and bake for 45-55 minutes until the internal temperature reaches 165°F (74°C).
- Let the meatloaf rest for about 10 minutes before slicing.
