Description
A quick and delicious one-pan meal combining crispy chicken with pasta in a rich tomato sauce and melted cheese.

- 2 boneless, skinless chicken fillets, cut into strips
- 1 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp dried basil
- 8 oz penne pasta
- 2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Season chicken strips with salt, pepper, and garlic powder.
- Dredge chicken in flour, dip in beaten eggs, then coat with breadcrumbs mixed with Parmesan and basil.
- Heat olive oil in a skillet over medium heat. Cook chicken until golden and crispy, about 4-5 minutes per side. Remove and set aside.
- In the same skillet, add marinara sauce and cooked pasta. Stir to combine.
- Top with cooked chicken and sprinkle mozzarella cheese over everything.
- Cover and cook on low heat for 3-4 minutes until cheese melts.
- Serve hot, garnished with extra Parmesan if desired.
Notes
- Use panko breadcrumbs for extra crispiness.
- Substitute mozzarella with provolone for a different flavor.
- Add red pepper flakes for a spicy kick.
