Ingredients

- 4 medium zucchinis
- 1 lb ground chicken
- 1 cup marinara sauce
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp garlic powder
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the centers to create boats.
- Brush zucchini boats with olive oil and season with salt and pepper.
- In a skillet, cook ground chicken until browned. Drain excess fat.
- Add marinara sauce, Italian seasoning, and garlic powder to the chicken. Stir well.
- Fill zucchini boats with the chicken mixture.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake for 20-25 minutes until zucchini is tender and cheese is melted.

- Use lean ground chicken for a healthier option.
- Add red pepper flakes for a spicy kick.
- Top with fresh basil before serving.
