Ingredients
- Cooked chicken breast – 2 cups, diced
- Greek yogurt – 1/2 cup
- Celery – 1/2 cup, finely chopped
- Grapes – 1 cup, halved
- Walnuts – 1/4 cup, chopped
- Lettuce leaves – 8 large leaves
- Salt and pepper – to taste
Instructions
- Prepare the chicken by dicing cooked chicken breast into bite-sized pieces.
- In a large mixing bowl, combine diced chicken, Greek yogurt, chopped celery, halved grapes, and chopped walnuts. Season with salt and pepper to taste.
- Wash and dry the lettuce leaves, then take a spoonful of the chicken salad mixture and place it in the center of each leaf.
- Fold the sides of the lettuce over the filling and roll them up tightly. Serve immediately or chill before serving.
