Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 medium sweet potatoes, cubed
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp garlic powder

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss sweet potatoes with olive oil, salt, pepper, paprika, and garlic powder.
  3. Spread sweet potatoes on a baking sheet and roast for 25 minutes.
  4. Season chicken breasts with salt and pepper.
  5. Cook chicken in a skillet over medium heat for 6-7 minutes per side.
  6. Slice chicken and divide into meal prep containers with roasted sweet potatoes.
