Ingredients
- Chicken Thighs: 4 pieces, bone-in and skin-on
- Sun-Dried Tomatoes: 1 cup, chopped (preferably in oil)
- Garlic: 4 cloves, minced
- Olive Oil: 2 tablespoons
- Fresh Basil: 1/4 cup, chopped
- Salt and Pepper: to taste
Instructions
- Preheat the oven to 400°F (200°C) and pat the chicken thighs dry with paper towels.
- Season both sides of the chicken with salt and pepper.
- In a large oven-safe skillet, heat olive oil over medium-high heat and sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
- Flip the chicken and cook for another 3-4 minutes, then remove from the skillet.
- Add minced garlic and chopped sun-dried tomatoes to the skillet, sauté for 1-2 minutes.
- Return the chicken to the skillet, spoon some sun-dried tomato mixture over the top, and transfer to the oven.
- Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
- Remove from the oven, sprinkle with fresh basil, and let rest for a few minutes before serving.
