Ingredients

  • Chicken Thighs: 4 pieces, bone-in and skin-on
  • Sun-Dried Tomatoes: 1 cup, chopped (preferably in oil)
  • Garlic: 4 cloves, minced

  • Fresh Basil: 1/4 cup, chopped
  • Salt and Pepper: to taste

Instructions

  1. Preheat the oven to 400°F (200°C) and pat the chicken thighs dry with paper towels.
  2. Season both sides of the chicken with salt and pepper.
  3. In a large oven-safe skillet, heat olive oil over medium-high heat and sear the chicken thighs skin-side down for 5-7 minutes until golden brown.
  4. Flip the chicken and cook for another 3-4 minutes, then remove from the skillet.
  5. Add minced garlic and chopped sun-dried tomatoes to the skillet, sauté for 1-2 minutes.
  6. Return the chicken to the skillet, spoon some sun-dried tomato mixture over the top, and transfer to the oven.
  7. Bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  8. Remove from the oven, sprinkle with fresh basil, and let rest for a few minutes before serving.
