Ingredients
- Chicken thighs (500 grams)
- Jasmine rice (1 cup)
- Soy sauce (1/4 cup)
- Garlic (3 cloves, minced)
- Ginger (1 tablespoon, minced)
- Green onions (3, chopped)
- Bell peppers (1 cup, sliced)
- Sesame oil (2 tablespoons)
- Chicken broth (2 cups)
- Salt and pepper
Instructions
- Marinate the chicken with soy sauce, salt, and pepper for 15-20 minutes.
- Rinse jasmine rice under cold water and cook with chicken broth in a medium pot for about 15 minutes.
- Heat sesame oil in a large skillet, sauté garlic and ginger for 30 seconds, then add bell peppers and green onions until tender.
- Add marinated chicken to the skillet, season, and cook until browned (5-7 minutes).
- Pour in remaining soy sauce and chicken broth, simmer until sauce thickens, then serve over fluffed jasmine rice, garnished with green onions.
