Ingredients

  • Chicken thighs (500 grams)
  • Jasmine rice (1 cup)
  • Soy sauce (1/4 cup)
  • Garlic (3 cloves, minced)
  • Ginger (1 tablespoon, minced)
  • Green onions (3, chopped)
  • Bell peppers (1 cup, sliced)
  • Sesame oil (2 tablespoons)
  • Chicken broth (2 cups)
  • Salt and pepper

Instructions

  1. Marinate the chicken with soy sauce, salt, and pepper for 15-20 minutes.
  2. Rinse jasmine rice under cold water and cook with chicken broth in a medium pot for about 15 minutes.
  3. Heat sesame oil in a large skillet, sauté garlic and ginger for 30 seconds, then add bell peppers and green onions until tender.
  4. Add marinated chicken to the skillet, season, and cook until browned (5-7 minutes).
  5. Pour in remaining soy sauce and chicken broth, simmer until sauce thickens, then serve over fluffed jasmine rice, garnished with green onions.
