Ingredients

Instructions
- Prepare the caramel by melting sugar and water in a saucepan until it turns amber, then add heavy cream.
- Make the chocolate ganache by heating heavy cream and mixing it with chopped dark chocolate until smooth.
- Combine the warm caramel with the chocolate ganache in a mixing bowl.
- Chill the mixture in the refrigerator for 1-2 hours until firm.
- Scoop out portions of the mixture and roll them into balls.
- Coat each truffle in finely chopped pecans and refrigerate for another 30 minutes to set.
