- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 4 cloves garlic, minced
- 1 lemon, sliced
- 1 onion, quartered
- 2 carrots, chopped
- 2 celery stalks, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Rinse chicken and pat dry with paper towels.
- Rub chicken with olive oil, salt, pepper, thyme, rosemary, and minced garlic.
- Stuff cavity with lemon slices and onion quarters.
- Place chicken in roasting pan surrounded by carrots and celery.
- Roast for 1.5 hours or until internal temperature reaches 165°F (74°C).
- Let rest 10 minutes before carving.
Notes
- For crispier skin, pat chicken very dry before seasoning.
- Add potatoes to the roasting pan for a complete meal.
- Use fresh herbs if available for better flavor.
