Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and prepare a loaf pan.
- Rinse and chop the cranberries.
- Cream the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition, then add vanilla.
- Combine flour, baking powder, and salt in a separate bowl, then mix with wet ingredients.
- Fold in the cranberries gently.
- Pour the batter into the prepared loaf pan.
- Bake for 55-65 minutes, checking for doneness with a toothpick.
- Cool the cake in the pan for 10-15 minutes, then transfer to a wire rack.
- Dust with powdered sugar once cooled.
