Ingredients
- π° Almond flour β 2 cups
- π₯₯ Coconut flour β 1/2 cup
- π₯ Baking powder β 2 teaspoons
- πΏ Ground cinnamon β 2 teaspoons
- π Maple syrup β 1/3 cup
- π₯ Almond milk β 1/2 cup (or any dairy-free milk)
- π₯₯ Coconut oil β 1/4 cup, melted
- π₯ Eggs β 3 large
- π¦ Vanilla extract β 1 teaspoon
- π¬ Coconut sugar β 1/4 cup (for the cinnamon swirl)
- π° Additional cinnamon β 1 teaspoon (for the cinnamon swirl)
Instructions
- Preheat your oven to 350Β°F (175Β°C).
- In a large mixing bowl, combine almond flour, coconut flour, baking powder, ground cinnamon, and coconut sugar. Whisk until well blended.
- In another bowl, whisk together maple syrup, almond milk, melted coconut oil, eggs, and vanilla extract. Pour the wet mixture into the dry ingredients and mix until just combined.
- In a small bowl, mix additional cinnamon with remaining coconut sugar to create the cinnamon swirl.
- Spoon about 1 tablespoon of muffin batter into each muffin cup, sprinkle with cinnamon swirl mixture, add another tablespoon of batter, and top with more cinnamon mixture.
- Bake in the preheated oven for 18-20 minutes, checking for doneness with a toothpick.
- Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack.
