Ingredients

  • 🍬 Coconut sugar – 1/4 cup (for the cinnamon swirl)
  • 🌰 Additional cinnamon – 1 teaspoon (for the cinnamon swirl)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C).
  2. In a large mixing bowl, combine almond flour, coconut flour, baking powder, ground cinnamon, and coconut sugar. Whisk until well blended.
  3. In another bowl, whisk together maple syrup, almond milk, melted coconut oil, eggs, and vanilla extract. Pour the wet mixture into the dry ingredients and mix until just combined.
  4. In a small bowl, mix additional cinnamon with remaining coconut sugar to create the cinnamon swirl.
  5. Spoon about 1 tablespoon of muffin batter into each muffin cup, sprinkle with cinnamon swirl mixture, add another tablespoon of batter, and top with more cinnamon mixture.
  6. Bake in the preheated oven for 18-20 minutes, checking for doneness with a toothpick.
  7. Let the muffins cool in the tin for about 5 minutes before transferring to a wire rack.
