Ingredients
- Cooked chicken: 2 cups, shredded or diced
- Carrots: 2 medium, diced
- Peas: 1 cup (fresh or frozen)
- Potatoes: 2 medium, peeled and diced
- Onion: 1 medium, chopped
- Garlic: 2 cloves, minced
- Chicken broth: 2 cups
- Heavy cream: 1 cup
- Thyme: 1 teaspoon, dried or 1 tablespoon fresh
- Salt and pepper: to taste
- Store-bought pie crust: 1
- Homemade pie crust: flour, butter, salt, and water
Instructions
- Prepare the chicken by shredding or dicing cooked chicken or poaching fresh chicken breasts.
- Make the filling by sautéing onions and garlic, then adding carrots and potatoes, followed by chicken, peas, broth, cream, thyme, salt, and pepper.
- Prepare the pie crust by rolling out store-bought or making your own dough.
- Assemble the pot pie by pouring the filling into the crust and covering it with a second crust if desired.
- Bake in a preheated oven at 425°F (220°C) for 30-35 minutes until golden brown.
