Ingredients

  • 1 ribeye steak (1.5 inches thick)
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp butter
  • 2 cloves garlic (crushed)
  • 2 sprigs fresh rosemary

Instructions

  1. Remove the steak from the fridge 30 minutes before cooking to bring it to room temperature.
  2. Pat the steak dry with paper towels and season both sides with salt and pepper.
  3. Heat a cast-iron skillet over high heat and add olive oil.
  4. Place the steak in the skillet and sear for 3-4 minutes per side for medium-rare.
  5. Add butter, garlic, and rosemary to the skillet during the last 2 minutes of cooking.
  6. Baste the steak with the melted butter mixture.
  7. Remove the steak from the skillet and let it rest for 5 minutes before slicing.

Notes

  • Use a meat thermometer for accuracy: 130°F for medium-rare, 140°F for medium.
  • Letting the steak rest ensures juiciness.
  • For a thicker crust, press the steak lightly with a spatula while searing.
