  • Red bell pepper: 1/2 (chopped)
  • Green bell pepper: 1/2 (chopped)
  • Yellow bell pepper: 1/2 (chopped)
  • Celery: 1 stalk (chopped)
  • Garlic: 3 cloves (minced)
  • Fresh ginger: 2 tablespoons (minced)
  • Seafood seasoning: 1 tablespoon
  • Canned roasted tomatoes: 1 (14.5-ounce can)
  • Green onions: 1/4 cup (chopped)
  • Coconut milk: 1 (14-ounce can)

Instructions

  1. Rinse the cod filets under cold water, pat dry, and cut into bite-sized pieces. Season with salt and pepper.
  2. In a large pot, heat oil over medium heat and sauté the chopped onions and bell peppers for 5-7 minutes.
  3. Add minced garlic and ginger, cooking for an additional 1-2 minutes.
  4. Sprinkle seafood seasoning over the vegetables, then add canned tomatoes, lime juice, and zest.
