Ingredients

- 2 cod fillets (6 oz each)
- 1/4 cup unsalted butter
- 3 cloves garlic, minced
- 1 lemon, juiced and zested
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup quinoa, rinsed
- 2 cups water or vegetable broth
- 1/2 cucumber, diced
- 1/4 red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1 tbsp olive oil
Instructions
- Cook quinoa in water or broth according to package instructions. Let it cool.
- In a bowl, mix cooled quinoa with cucumber, red onion, parsley, and olive oil. Set aside.
- Season cod fillets with salt and pepper.
- Melt butter in a pan over medium heat. Add garlic and sauté for 30 seconds.
- Add cod fillets to the pan. Cook for 3-4 minutes per side until golden and flaky.
- Pour lemon juice and zest over the cod. Simmer for 1 minute.
- Serve cod with quinoa salad.
Notes
- Use fresh cod for the best texture.
- Adjust lemon juice to taste.
- Quinoa can be made ahead and stored in the fridge.
